What is the difference between Osetra and Kaluga caviar?

Osetra is traditional and complex, offering a medium-firm bead, moderate ocean brine, and a distinct nutty finish. Kaluga offers a massive, delicate bead that is intensely creamy, buttery, and exceptionally smooth with minimal brininess.

How do Osetra and Kaluga differ in texture and bead size?

Kaluga produces some of the largest pearls available, second only to pure Beluga. These large beads are generally softer and melt on the tongue. Osetra pearls are slightly smaller but notably firmer, delivering a crisp, distinct pop that many purists demand.

Should I choose Osetra or Kaluga caviar?

If you prefer a bold, classic caviar experience with a savory, oceanic complexity and a firm pop, choose Osetra. If you prefer a richer, more luxurious mouthfeel, lower salt content, and a flavor profile that emphasizes butter over brine, Kaluga is the superior choice.
