How is premium caviar produced today?

Wild sturgeon populations were nearly driven to extinction in the 20th century. Today, premium caviar comes from sustainable, highly controlled aquafarms that require massive infrastructure to simulate wild river conditions, maintain perfect water purity, and monitor the health of thousands of fish for years.

How is caviar harvested and graded?

When a sturgeon finally matures, the roe is extracted, carefully washed, and graded entirely by hand. The curing process (Malossol, meaning little salt) requires the touch of a Master Salter to perfectly preserve the pearls without overwhelming them. Only the largest, firmest, and most flawless pearls receive the highest grading and pricing.
