What Temperature Should Caviar Be Served?

Keep the unopened tin cold: Store unopened caviar in the coldest part of the refrigerator at 28°F to 32°F and never freeze it.
Move it directly to a chilled setup: Open the tin close to serving time and place it over crushed ice so the caviar remains cold at the table.
Maintain the chill at the table: Serve the tin over ice throughout service and return any remaining caviar to the coldest part of the refrigerator promptly.
