How to Serve Caviar (Utensils & Temperature)

Use non-metallic utensils: Always use Mother of Pearl, bone, horn, glass, or wood spoons. Never use silver or stainless steel, which will instantly oxidize the roe and impart a harsh, metallic taste.
Chill the caviar over ice: Remove the caviar from the refrigerator 10 to 15 minutes before serving to let its flavors open up, but keep the tin resting on a bed of crushed ice throughout service.
Handle the pearls gently: When scooping caviar, slice vertically into the pearls rather than stirring or mashing them. The goal is to keep each bead intact until it is crushed against the roof of the mouth by the guest.
