How to Store Caviar Properly
Caviar must be kept ice-cold but never frozen. Learn the optimal temperature and timeline for storing your roe.

Store at the correct temperature: Keep unopened caviar in the coldest part of your refrigerator at 28°F to 32°F (-2°C to 0°C) for up to 4 weeks. Never place caviar in the freezer, as freezing destroys the delicate texture of the pearls.
Choose the right refrigerator spot: Place the tin in the coldest zone—usually the bottom drawer or the back of the lowest shelf. For best results, surround the tin with a small ice pack or crushed ice inside the refrigerator.
Seal and refrigerate after opening: Smooth the remaining pearls to minimize air pockets, press plastic wrap directly onto the surface of the caviar, seal the lid tightly, and return to the coldest part of the fridge. Consume within 48 hours.
