Choose a service style: Plan for a dedicated Caviar Station for maximum impact, allocating 10 to 20 grams per guest. If serving as a passed appetizer during cocktail hour, 5 to 10 grams per guest is sufficient.
Set up the station: Display large format tins (500g or 1000g) nestled in dramatic ice sculptures or elegant silver presentoirs. Surround the ice bath with small bowls of warm blinis, potato chips, crème fraîche, and Mother of Pearl spoons. A roaming Champagne cart or adjacent raw bar further elevates the footprint.
Staff it for consistent portions: Assign a station attendant to portion bumps or composed bites evenly—typically 5 to 10 grams per serving. The attendant prevents rapid depletion by enthusiastic guests and enhances the luxury experience by speaking to the origin and flavor profile of the roe.
