What Not to Serve With Caviar

Avoid reactive silver utensils: Do not serve caviar with reactive silver utensils. Mother-of-pearl, bone, horn, glass, or wood keeps the presentation traditional; clean stainless steel is non-reactive when that is what you have.
Keep strong flavors away from the first taste: Taste the caviar plain before adding pairings, and favor neutral vehicles such as blinis, potato, or crème fraîche.
Be cautious with sweetness and heavy acidity: Dry Champagne or chilled vodka can reset the palate, while sweet wines and heavy lemon can compete with the roe’s brine.
Do not let the tin warm or freeze: Keep the tin over ice during service, never freeze it, and follow the storage guide for the remainder.
